If you don't know if your bread is done, turn it over and tap the bottom. If it's done, it should sound hollow
Dry yeast and fresh yeast require different temperatures of water
This goes for pretty much anything you put in the oven, but if it looks done on the outside, but still needs more time to fully cook, loosely cover the outside with foil or baking parchment to keep it from browning too much further while still allowing the insides to fully cook
