Hardcore and monotype nuzlockes (where you can only catch pokemon of a single type) seem like the most fun.
Other formats I know of that might not be complete trash are snaplocke (after every gym battle, half of your team dies depending on coin tosses), palettelocke (pick 3 colors and you can only catch pokemon of that color depending on their dex entries), and destinylocke (you choose 6 pokemon to run the game with and if they die they can't be replaced).
