Making us happy with postgame, difficulty options and quality of life changes to match other modern games would probably delay the games a little and cost more.
They'd have to put genuine effort in. And since we're such a small part of the audience compared to the genwunners who only need Kanto or pandering to be happy, and the kids and Pokedrones who simply need the Pokemon logo to be happy, the increase in effort wouldn't be worth the increase in profit.
I hate it too anon. I truly do. But its easier for you to accept the truth than keep holding out hope for this shitty company and getting burned every time.
