Every Pokemon game is easy, every Pokemon romhack is easy, it's a turn-based game where the most complicated thing is knowing a rock paper scissors table, the only people who would find it challenging are young kids.
The most successful games in this franchise are Red and Blue, which also are probably the easiest, seriously go look at some of the movesets for gym leaders or the E4. That doesn't mean they're bad games and it also means that difficulty is literally completely irrelevant as something that should exist in this franchise.
If you want a hard game, go play Elden Ring or Bloodborne or something, quit shitting up this board by desperately trying to prove your baby game is harder than another baby game
