I usually start projects with a small simpler scope though, so I'd start out just trying to complete a basic (You) self insert VN with the 3 May dating options. If that ever ends up completed, I'd expand the VN to other options, like your idea of getting to play as Brendan/Ruby/Ash etc. Though with that expanded end goal in mind I'd reserve certain story ideas for those guys instead of using them for the self-insert guy routes. For example if contests are Drew and Ruby's thing, I'd let them stay unique and not make (You) a contest specialist. Or if I already know Ruby is Sapphire's childhood friend, I might avoid making the (You)/Sapphire storyline be a childhood friends storyline. Just to try keeping every route as unique as possible, writing is hard enough without also having to come up with 200 fresh ideas.
Not sure whether to make RSE rival May and ORAS rival May different characters though. They have very different personalities. RSE May struggled with confidence and might even be shy around strangers at least at the start. Meanwhile ORAS May is just a pure bubbly genki girl. Might come down to which one people actually want to date.
