Got a copy pretty early through means I will not describe. Here is everything I know, and while I got to see up through about 80% of the game, I have not done/seen everything yet. Here goes.
>The opening cutscene is indeed an issekai scenario. Willow appears as the professor in the intro cutscene, with Oak on monitor. The monitor is the Pokemon world, different from the world of Go, and the dialogue talks of two worlds joining together through you (the player). We get Oaks old dialogue, as well as the player chibi-fying.
>The starters are what brings Willow to you. The Pikachu/Eevee in question escaped to the world of Go (narrative seems to be like Go where Pokemon just start appearing in the “real” world and Pikchu/Eevee is one of them) and the reason it says “met again” on the status screen in game is because you see Willow send it back (it’s the trope of the Professor showing a Pokemon in the intro thing) to Oak after you meet it.
>The starters can NOT go in the Pokeball plus, they are the only Pokemon that can use HMs (therefore no trading or releasing), and only Lapras and Gyarados are able to be surfed on because its their ride function
>You change the hair of the starter by combing it in the “play with Pikachu/Eevee” feature”. Funniest one is a huge Josuke pompadour.
>Dress up options are kind of shitty, can’t take the hat off the trainer at any point. Can change skin color though.
>Negligible change to Gyms. With the super Powered Pikachu I was able to fly through most of the game, not to mention all the candies and shit you get
>Never got a shiny from chaining catches, but did get a massive exp haul and had a team level 25s before Misty just farming/catching what was around for an hour or so
>Cinnabar Mansion still has the switches, as does the Rocket hideouts with their warp pads. Haven’t gotten to e4 yet but will update when the time comes
>Marowak dying is replaced, instead is just a string of double battles with the Rival
