1. You don't need both Defense stats to tank effectively. E.g. Chansey doesn't give a single shit about special attackers thus it is an effective wall.
2. You need both Attack stats if you want to be an effective attacker. Chansey can't tank shit if you have strong physical offense after all.

For example, in Baldur's Gate, if you are making a warrior you increase his Strength, Dexterity and Endurance while reducing Charisma and Intelligence. And you pick 2 different types of weapon while omitting others IIRC.
Bottom line, you can maximize more than one thing if it actually ends up benefiting you more. The whole philosophy behind minmaxing is to "gain as much as possible", not "have the biggest stat possible".
