The core of the game though is farming and chatting with towns people becoming friends. The number of obtainable pokemon you could get would be small, 150 or less, and pokemon that would make good farm animals or farm hands would be the bulk of the dex. Yes, marrying towns folk would be possible.

Would a spin-off like this be succesful?

I wish Home at least let you hang out with your pokemon like Ranch did, it'd at least be a small compromise for not being able to bring anything and everything into the newer games.

Make another game similar to Pokeranch/Pokepark as an update to HOME; put all your Pokes in it, and play fun minigames, give them specifuc Poffins to enter contests, etc. Also have your own house to decorate with Pokedolls and such.

Maybe add simple multiplayer for trading and battling online with your bros. No gimmicks (Megas/Z-Moves/Dynamax), just for fun.
