Disgaea. Strategy RPG, you can create generic units and then treat them like OCs, grind levels and raise stats in whatever specific way you want, equip them with weird weapons, and reincarnate them into different classes to get varied movesets. If you enjoy EV-training and IV-breeding you'll probably enjoy the Item World.
If you enjoy being a degenerate waifufag you'll be in heaven. Small tiddy? Big tiddy? Monster girls? You have a buffet of choices. Husbando potential is slimmer but still there, D4 gives you a vampire and werewolf who are pretty hot.
There are 5 main games and various spinoffs, across multiple consoles and Steam. You don't have to play them in order but characters from past games make frequent cameos in more modern ones. The not-quite-prequel, La Pucelle Tactics, lets you tame wild monsters. Not-quite-spinoffs like Makai Kingdom and Phantom Brave let you build your armies and fiddle with stats in slightly different ways.
It's so autism-friendly that Ulililia wrote a gameFAQ about Disgaea 2. Look it up for a small chuckle.
