Now let me go with a bit of an explanation about Alolachu's ability. Shot Out is right now the hottest thing we have, one of the best burst damage things available with a damage multiplier going up as the skill level increases. x2 for level 1, x3 for level 2, x4 for 3, x6 for 4 and x8 for skill level 5.
If you repeat the stage after catching it, it'll start dropping presents from time to time, each one boosts the skill level just a little bit. You only need 5 for level 2. And while an Electric Shot Out isn't exactly the best coverage-wise it can bail you out in many stages if you're still starting out. So if possible, and if you really want to try that, go for the presents, it has a shit rate but you should be able to reach SL2.
For Meowth I guess it depends on your mons and their BP. You can try going with a Fighting type and three normal mons.
If you end up killing it too fast use a Fighting, 2 neutral mons and 1 ghost.
If you don't come close to killing it after getting your coins you can go 2 fighting, 2 neutral, or alternatively and heavily recommended use a "finisher" ability, like Last ditch effort, which has a multiplier of x5 even at skill level 1 so it deals a huge amount of damage on the last 4 turns.
As for the coin arrangement itself it requires some time to get the hang of it, but if you're on 3DS you should be able to get a match of 5 coins (530) frequently.
After you get accustomed with it you can, later down the road grind experience on the same stage too and vary your teams.
