You get eggs very commonly at pokestops. You can't refuse eggs at pokestops. You can't discard eggs you don't want. The only way to free egg storage space is to walk it off. So the solution to that is to not spin at pokestops (for a while). Obviously you need to keep spinning stops to play this game so here's what you have to do.
Make a ton of friends online (just add whoever's seemingly active and willing to send you gifts every day or two), not every friend that will give you gifts will give you an egg, but about every other friend will, so it's not uncommon or hard to recieve 7 KM eggs, you just need a lot of people to do this with. With an empty egg storage, you can get 9 7KM eggs from say, 15-20 online friends giving you gifts, maybe even less than that, in pretty much under a day.
So the best way to go about this is to stop spinning stops temporarily, make friends if you don't already have enough online friends, empty your egg storage by walking all the 2 KM eggs out, or at least enough for a 7 KM or egg or two to fit into your sorage space for the time being if you're fat, and then keep hatching your 7 KM eggs until you get a grimer and then decide from there how you want to evolve it. It'll take awhile because it's 7 kilometers and even more if there's up to 9 of them, but it's a good way to put that potential grimer in a queue before the egg pools temporarily change again. As long as you recieve an egg before some new event that egg pool is permanent in the egg. For example I hatched a pichu with a hat several years after whatever event egg pool it was from despite the current one at the time being completely different.
Another optional way to make that go by even quicker is to get additional egg incubators, if you have the coins to spare. That way you can hatch multiple 7 Km eggs at once.
