That fight and the scene of choosing your mon seem to be taking place at Hop's house next door to yours.
But I imagine we're going to have to go do some shenanigans with the Professor and Sonia and their two buildings (one seems to be their lab while the other is their house) before you get to pick your Pokemon.
Though it looks like the choosing ceremony also happens at Hop's house, which is odd.

>Get Mon at Hop's House>Fight Hop with one pokemon>Run tutorial errands for Magnolia/Sonia (giving time to train or catch pokemon)>Get train ticket out of there>Fight Hop once more before the two of you leaveOr maybe he really does just start with two pokemon to give your starter a stronger boost.
