Why would you not max HP first? You're wasting your EVs by maxing Sp. Def before HP. You'd get largely the same amount of bulk on both the special AND physical side by maxing HP.
NEVER NEVER NEVER put EVs into either defense before HP unless its something that has very, very high base HP, like Chansey or Vaporeon.
