Dirt and mud doesn't conduct eletricity, simple as that. The earth neutralizes electric voltage and, as such, are able to strike back and fully counter electric power, hence being its only weakness

If you throw a bunch of dirt or mud over a fire, it goes out. Dirt in large amoubts supresses fire, so much that magma is kept inside vulcanoes, made of rock and dirt.

Ground isn't alive. You can't poison dirt or clay. As such, ground pokémon can count on their coats of clay and sand to protect against poison.

Ground stores mineral. In fact, the force of the earth and its heat are what PRODUCES minerals. Rocks and steel are created by Earth's Power (no pun intended) and a mountain can easily come apart in an earthquake.
>not effective against grass and bug
Both plants and bugs are lifeforms that use the ground as their homes and have a major role in their lifestyle. As such, they're used to it and living in it.

Water makes the ground wet, changing it's chemical composition, effectively making it softer and coming apart. Much like a sand castle being destroyed by a wave. Ice, in the same way can freeze the ground and change its composition, since it's basically frozen water. Most lifeforms can't live on frozen soil.
>weak to grass
Plants live on the ground. They exploit, taking nutrients and water from it. Weed can easily fill desolated soil in a matter of weeks. Ground is the habitat for plants, so it can be said they abuse it.
