Oak hands these two blank physical books to you and Green after you fight and asks you to fill them out. Since these things aren't machines that auto-update like later games and media establish, but are instead physical paper books in RGBY, then the only way they're getting filled is if Red and Green are the ones writing in them; we can assume Oak later compiles them into a formal scientific journal in digital format after he rates both characters' dexes.
