But otherwise correct. From my experience, the singular they was even somewhat accepted by many grammar nazis in the early 2000s (unless there was an obvious gender ofc), and its more recent controversy is a reaction to the growing prevalence of transgendered people in the past half dozen years.
Also, to add on to your "one" bit, that's used in a more proper register of speech; a more casual setting often has the indefinite "you", i.e. "you'd think a 20-something would know how to make toast by now" or "before then, you'd just have to risk getting a sunburn."
