How I see it, there's two way I could go about it:

Swampert is a given (which rules out Whiscash) and together with Tentacruel and Ludicolo I'd get a good early-game core.
I'd also be interested in trying out Crawdaunt (I don't really like Sharpedo and Gyarados is also a bit boring, especially since I'd rather have only 1 mega).
Pelipper would save me switching out for a flying mon (at least until I can soar), but ehhh. Starmie could be interesting, but I find it lacks... characters. I also don't really like Azumarill.
Finally, I'd also be interested in trying out Walrein and Lanturn as well (although you get them kinda late).
Monotypes 'mon are boring, same as those who don't evolve (like Relicanth and Corsola).

This would keep the medium level down, which (together with the mono-type) would give the game a semblance of challenge at least. However I fear it might get boring fast.
