So you're saying a lot of things that I feel I should address.
First, it's completely natural to feel sad about Serena's departure, as long as you can control your sadness. 8 years is enough time that you already went through Dawn's departure, so you should have a pretty good idea already.
I came from a very strong AdvanceShipping background, and I don't feel bad at all. I certainly don't regard myself or anyone else here as a traitor. In fact, I distinctly remember that one of the first things I said in V1 was that I found it to be a magical thing to see so many people from different shipping communities coming together to support the pair that met in childhood. Some of us came from communities that were bitter enemies. Amour looked a lot like a sign of peace and unison at long last, something that continues to evade the Pokemon shipping communities even today due to Poke, Pearl and Amour loyalists. Still, watching so many familiar faces from Poke, Advance and Pearl come together was beautiful in its own way.
I don't think Serena is coming back into the series at Gen VIII unless SM is either a flashback series or a timeline split. If it happens I wouldn't be opposed but I really see no chance.
An AmourShipping movie? It's a nice thought, but I doubt it. M09 was the last really shippy movie, and the Advancers still consider it the crown jewel.
Actually, with XY winding down, I want to take a moment to again recommend a song from that movie. It's called Together We Make a Promise, and it's one of my favorite Pokemon songs period. Though I do wonder what the ending song for the last movie will be. There's a theme of putting in really sad goodbye songs at the end, and the other two ending songs from the XY movies were both from Serena's perspective about Ash.
