Pokemon Blue
I don't have a favorite. It's going to sound weird but I don't really look at Pokemon games as individual experiences anymore. The Pokemon "experience" to me is like a giant MMO with a neverending supply of expansions. Any individual Pokemon game is probably not very good, unless it's a romhack. Oddly enough, if you want me to straight out just pick a favorite, it's between Pokemon Scarlet/Violet, any gen 2 game, or Pokemon Let's Go Eevee or Pikachu.
X and Y were great. Sun and Moon were decent games utterly ruined by unstoppable dialogue and cutscenes. I never ever want to replay those games, ever. The games were actually good too, but I remember multiple movies worth of just horrible, unskippable bullshit where I just put the DS down, mash A, and look at something else instead. The sad thing is, Lillie and Hau were actually sort of fun and interesting too. This brings me to Sword and Shield, the worst games in the entire series. They removed content, made the games more expensive and run like shit, put no effort in whatsoever and immediately mogged themselves so hard with Legends: Arceus and then with Scarlet/Violet that even in hindsight, with the dust unironically settled, and me clearly being able to enjoy the new games, saying Sword/Shield are some of the worst games in the series.
The single thing that saved Pokemon imo was mints, exp candies, and making EV training easier than ever. They made it just convenient enough for me to bother playing on console, though the presentation is still lackluster and the online is very slow, unforgivably clunky and laggy as all hell. At least I can actually make my in game Pokemon not shit now. At least Scarlet and Violet are actually functional games that are fun to play and don't feel like the game devs are insulting you, like with Sword and Shield.
