The amount of stardust they reward reflects the value of that item.

Other species that give bonus stardust include Delibird, Sableye, Chimecho, Combee, and Audino, but they do not carry valuable items that translate to a high stardust catch bonus. They probably have another thematic reason for the bonus, such as Audino's famously high EXP yield for power-levelling in B/W.
Catching a Galarian Meowth does not provide a stardust bonus like the Kantonian or Alolan variants.
Dwebble arguably should give a stardust bonus, because in B/W it has a 1% chance to hold a rare bone.
Audino notably applies its stardust bonus differently to all other bonus Pokémon.
Instead of having a base stardust of 2100, it has a base of 100, and adds 2000 after all other active bonus effects (event, weather boost, star piece, etc).
A double stardust event will award 2200 when catching an Audino as opposed to 4200.
Cloyster by comparison, has a base reward of 1200 stardust, so that will double to 2400.
