We got a shitload of in-universe lore which along with teraleak revealed a deeper connection between Alola and Kalos that went beyond just "they never made Z so had to shove Zygarde in SM" narrative /vp/ spewed and further enhanced Zygarde lore (Kalos' regional protector being a protector of the environment the pokéworld over, dyue to it being drawn to Alola with the UB/Necrozma affair), which no remake would have been able to explain succinctly. And again, per teraleak, they stated about Legends they wanted them to be more challenging than the new Gen pairs, so the shift to them was as much likely burn-out from making the same kiddy-tier games constantly, now it takes more time to make each one in 3D. Choosing something new from the base region (goes for DLC too, IoA/CT different to all of Galar proper, SV DLC went back to Japan, then an undersea school off Unova, WILDLY different form the pastures and plains of Paldea) for the next project up, than re-treading old ground with the same mentality as the new Gen game released, that's going to have DLC of similar scope and level as that before putting out a game in another visited region just to refresh the games for the younger crowd. More fun to pick something new, related to an existing region and try and look at it from an alternative angle than the kiddy-focused games.
