Rarest shit I caught was Hypno and Rhydon (drycuck, Rhyhorns aren't rare here and Gyms are flooded with Dons). Only final three-stage evos I ever found were Pidgeot, Golem, Gengar (for Hallowe'en) and the aforementioned Zam sighting.
