They simply streamlined the "choose your character" process to one screen rather than the clunky nature of XY's "are you a boy, or a girl?" leading into a second screen basically asking "OK, so are you a spic, aryan, japanese, or a nigger?"
Even if they don't directly mention the character's obvious sex in the selection screen, NPCs will refer to you by the expected pronouns of that sex, even in SV where you can effectively be a trap thanks to all hair options being available to both sexes.
