Why is ice super effective on dragons? Why do pokemon use moves with types they're weak against? Like starmie using thunderbolt or gliscore using ice fang. What's up with that?

They probably did that to make Ice more useful and Dragon less OP. Fighting has only a few weaknesses, but mainly it doesn't resist too much. Dragon resists, what, 6 types? Fighting resists about 3.

I'm more curious why, given that metal conducts electricity and punching a steel wall is a good way to break fingers, fighting gets 2x on steel but electric doesn't.

Boiling only kills bacteria and viruses. Poisons are harmful because of their chemical composition which does not change just because they got hot; you'd have to add a solvent to make it less poisonous.

Actually, it's deeper than that. Psychic is the representative of human mind power. Ghost, Bug and Dark are Super Effective on it because they are the three greatests fears in mankind: Bugs, Ghosts and Darkness.

The same goes to poison. Pain and diseases can be overcomed by a strong mind. Therefore, Psychic > Poison.
