Generally speaking; when DV-breeding a Pokémon, what is better? 31 HP or 31 Sp./Def?

I usually breed my Mons with 31 HP, 31 Sp./Atk and 31 Speed but I was wondering if 31 Sp./Def may be better instead of 31 HP.
