I mean, sure, the later gens get into more obsure creatures (for example, Volcarona is not the standard moth, while Venomoth is more a 'typical' moth), but they're not 'running out of ideas', they're just branching out. I mean, there isn't just one type of feline in the real world, why should there be in the Pokemon world? Not only that, but there are so many animals that are yet to have Pokemon based on them.
I will agree that many of the Pokemon of certain types, such as Dragon, are a lot more similar looking than of other types, but those are far and few between anyway.
