Most of the time I'll go for either an all-male team, an all-female team, or a three-male-three-female team (excluding nongendered mons), especially if I'm nicknaming my team. When I want to nickname my team, I'll usually think of a Pokemon I want to use along with a name for it (usually the first name that pops into my head). Then I'll go find that Pokemon of whatever gender the name is for. Like if I wanted to have a Pidove named James, I'd go look for a Pidove, but I wouldn't catch a female. Which genders of Pokemon I use really depends more on my mood than anything.
As far as I can recall, the only Pokemon I'm adamant about regarding gender is Gardevoir. I will never use a male Gardevoir. In fact, it took me more than half an hour to catch a Ralts in my new Sapphire file because I kept running into males.
