Plants absorb water.
Plant roots split rock, ground and absorb nutrients from the latter

Psychic weaknesses are all common fears (Darkness, Bugs, Ghosts)

Fighting type weaknesses are things they cannot deal with physically. Punches and kicks are easy to avoid for flying creatures. Mind over Matter in the case of psychics.

Poison is weak to Ground because the ground filters out toxins

Grass absorbing water explains both, actually.
With fighting, you're limited to earth movement. Air maneuvers allow for more versatility, evasion, and can catch people off guard.

Do you really need it explained to you why flying things make fighters look like fools? Martial arts moves are grounded. That makes for easy evasion. They have an extra dimension they can move around in.

There is a case for flying being immune to fighting but that would cripple Fighting type.

Water is a medium. Applying enough current to a small body of water will kill the things inside.

Steelt types take neutral damage from electric. They're a conductor, not a medium.

Earthquakes annihilate steel structures and cause landslides and mudslides. This is pretty easy.

Same reason why Water > Ground. Erosion.

You may not like it but the reasoning is sound. Permafrost is a real thing, and it's the last thing a ground elemental would want happen to them.

Grass is weak to it because cold kills plants and in extreme temperatures causes branches to snap off.

For the same reason Steel doesn't SE Grass.

They're not making the assumption that the steel is sharp or related to dragon slaying swords.

Steel is simply steel. The resilience of metals like Steel, Tungsten, Titanium, etc..
