So if I maxed out the ev's Its safe to fight against Pokemon that dont have to do anything with the evs im trying to raise? so in other words I wont lose any evs when I level up?

Yep, it's safe. Once you're maxed out, you're maxed out. The only way to lose EVs is to use some specific betters or go to a particular shop in B/W2. Normal battling won't "override" already-earned EVs.

EVing is really easy and fast if you have the right items. No need to resort to Pokegen. Now IV breeding on the other hand... Pokegen is great there.
