From what I've heard it's because trading exposes the Pokémon to certain types of radiation or of certain electrical frequencies. Theoretically, natural radiation or certain things like lighting strikes may be able to trigger the evolution naturally.

My head canon is that all pokemon eventually grow into their highest forms through aging.
Trade evolutions and stones are simply a way to speed up the process.

For example

...wait. Then how did people trade Conkeldur 2,000 years ago? Is the act of giving someone of your pokemon enough to make it evolve? I always imagined these guys evolved because some sort of electrical interaction from the machine that re-registers the pokemon with another trainer.

Funny, I remember reading a few years back it was the special experience of being with another trainer than the one who caught it that made it evolve. It would make more sense if the trainer actually used it before evolution, but whatever.
