Why don't they make some Pokemon exclusive to one gender? Like have Gardevoir, Gothitelle and Blissey be female only and Mr. Mime, Sawk, and Throh be male only

Blissey, Sawk, and Throh are already exclusive to those genders.

I think having one gender species is silly anyway. If you followed the mechanics of the game to the letter, you would realize that everything that is male only and doesn't have a female counterpart should not exist since the only way they can reproduce is by Ditto, and they're supposedly so rare that a population cannot be sustained.

I could see changing the females of particlarly masculine pokemon to look a little more feminine (and vice versa) but yeah, I don't have any problems with a female machoke or a male gardevoir.

Because it would have been impossible to retcon them without altering transferrable pokemon in a forced manner AND it would have served no tangible purpose aside from establishing a pointless elegance.

Ensuing shitstorms among poke community wouldn't have been perceived as an actual gain either.

Because they're not real animals. Just because the creators used some animal as inspiration, it doesn't mean they have to apply every male/female difference. It's a monster that resembles it. They have their own rules.
