If you've never played Pokemon before, Pokemon Black/White is the best place to start since the overall decline Pokemon design won't bother you much and the story is pretty good. Then move on to Black 2/White 2.

B/W or Platinum are great choices to start in this game. I also introduced a bit later to this franchise, but I started with Platinum and I don't regret.

Firered/Leafgreen are remakes of the first games, and good ones at that, that you could start out with.

You could then make your way thought the series at that point without having to go back to old game mechanics.

Those 6 are the minimum best (/ means choose one of those, but if you choose White go for White 2, the same with Black)

But if you want a single satisfying game experience, the best games of the franchise are Black and White, pick either.
