Competitively, my favorite is 252 SATk 252 Speed Timid.
Psychic, Giga Drain, Shadow Ball, Icy Wind with Life Orb.

Why such a moveset? Because it's the only one that actually takes advantage of his immunities. With Icy Wind for example, you can switch into Landorus Earthquake and destroy him next turn, but with just Shadow Ball, you couldn't and you'd get slammed by Stone Edge next turn. Same with Fighting types and Psychic. Giga Drain slays Gastrodon, Quagsire, and provides recovery.

It entirely depends on your team.
In most cases it's just speed+attack, but if you're running a stall team or are using Gengar for his resistances and immunities, you could run SubPunch, SubDisable like the previous poster said, or a number of other sets.

You have 6 Pokemon on your team, it's not just a series of 6 individual Pokemon.

They just choose not to switch out in the anime's championships, most of the time. But I don't think I can remember anything that was what I'm thinking you're describing, where if Sceptile knocks out Darkrai, you can't use Sceptile anymore.

I play NU where Haunter fulfills a verysimilar role to Gengar, and a popular set is SubDisable. Unfortunately, the tieris so full of multi-hit moves, it often doesn't work. Piloswine, every single Rock type, Klink, some people even run Fury Swipes Slaking, all use multi-hit moves.

Outside of Cloyster, are there a lot of users of multihit moves in OU?

That would sort of be useless though, seeing as Breloom already has Spore to make outspeeding a sleeping Pokemon a non-issue, mach punch to always go first anyway, and most sets run substitute so they have tons of leeway.
