The best way to go about this is to ask just 'what is a Pokemon?' A Pokemon is a species that comes in many shapes and sizes, with some being more complex than others. They are monsters that could look like animals, plants, minerals, objects, and other things. Some of which could have easily evolved that way due to weird Pokemon shit. Others were created by various means such as radiation of sorts (Trubbish) or perhaps just gaining its own AI and 'existing' (Voltorb).
Being that they come in many different shapes, sizes, and appearances, some of these monsters can look less interesting than others. However it doesn't mean that they are in any way uncreaitve.
One of the things about the Pokemon franchise is the capability of taking an object or creature and making it into a monster of some sort. This has always been an aspect of Pokemon since the original days. Just because one simply looks like it was made from something unoriginal such as sludge, trash, food, balls, or whatever else, what fully matters is that an actual creature was created, giving it a personality and things BEYOND its 'simple looks'
