Poison is a great defensive typing. It has a very relevant resist in Fight and Bug, and a niche resist in Grass. It's Poison resistance isn't a selling point, as you've noted, but you know what is?
Toxic immunity. The ability to absorb Toxic Spikes. Somethings you don't find in the type chart numbers, but add to its defensive strength.
Psychic weakness is a boon. If you had to choose a weakness, it's either Poison, Grass, or Psychic. EQ is a major concern, but that's the nature of having weakness.
The ability to absorb Toxic Spikes may not seem important in OU, but they're a tremendous strength and quality to have in other tiers, particularly in Ubers, where hazard stacking as at its strongest.
What Poison lacks are good users. All its good offensive/support Pokemon are from Gen 1, which had more Poison introduced compared to any other gen.
All the good defensive Pokemon lack reliable recovery, barring Arceus-Poison in Ubers, where it's viable and used often due to its defensive strengths, even in a metagame where Psychic is at its strongest.
Poison as a type isn't very good? Sure.
Poison has trash offense? True.
