I've been doing math to find out the most efficient way to breed but I still I lack some knowledge like which pokemon is checked first, what is the priority of stats checking and overwriting. Everything that works on PC, programs, games and other shit is based on loops and simple operation so if you'd want to plan the most efficient way of breeding, this info is also important.
EV training is easy. Basicilly it's specializing stats of your pokemon. Every pokemon has 510 points to spend on its stats. When pokemon gets exp, it also gets EVs (so pokemons with exp share also get EVs while not battling). Every stat has cap of 255 (so you can max up up to 2 stats), but getting all 255 is waste. That's because your stat increases every 4 points, and the highest multiple of 4 before 255 is 252. Every pokemon gives 1, 2 or 3 EV points which can be increased by certain items (power items and macho brace, but beware, effect of these items isn't passed by exp share). Pokemons with high attack pass attack EVs, pokemons with high hp pass HP EVs etc. When you're EV training, you can notice huge stat boosts while lvling up. That's because your stat must "catch up". When you spend all your EV points, growth will drop, but you don't have to worry about. Stat you trained will be growing much better than the ones you decided not to train. EV training is crucial for challanges like competitive battling and getting high scores in frontier/train.
Normally, when people don't care about this and just play, they'll be killing all kinds of pokemon and their EV spread will be either balanced or slightly specialized, but not always in a good way. for example I've been lvling up my haunter on machokes in platinum as a child. You can imagine how slow and weak my haunter was was.
