I sort of outgrew Arcanine and Ninetails because I got out of my "foxes/wolves are so cool" phase. I still like them, but not so much, not so blindingly and no longer because so cool fire dogs.

There's never been a pokemon I've "matured" out of, in fact I'm finding that more and more pokemon are growing on me like Hypno and Gastrodon.

For the most part my taste in design hasn't really changed, I just stopped fixating on appearance and appreciated what was there.

Muh bros. Gastrodon is one of my favorites from Sinnoh, and it opens the possibility to new regional forms (if gamefreak ever cared enough to do that).
