These are what I think are the best options:
>gameplay up to the first gym. once you get there the file is locked up and you can't continue. You can choose to start a new game and erase the previous save data. Data carries on to the actual copy like with Gates to Infinity. The advantage of this is they don't have to programme anything past the first gym into the demo and they could just not programme any unknown Pokémon. Getting your starter to evolution level would do nothing.
