Not sure if it could be implemented in game, but my jim would be a 2 battles,
The 1st would be by the challengers rules whether it be double/triple watever and decides the number of pokemon to use.
The second would be my rules.
With this you get to face the challenger how they want to fight, then how they adapt to another fight.

Or maybe I'd be a park ranger type with a gym in a forest - my Pokemon would be Heracross, Ursaring, Sawsbuck, Zoroark, Forretress, Poliwrath.

Or, maybe my theme would be farm Pokemon? Miltank, Tauros, Grumpig, Rapidash, Beedrill.

Something other than the typical one-type shit... it's boring to be able to sweep a whole team with one attack on one pokemon.

Gym? No. I'm going to be a wandering trainer, appearing randomly (truly randomly, none of that forced-storyline stuff) in different areas to challenge. My team will be made up with all the water/ground types: Quagsire, Swampert, Whiscash, Gastrodon, and Seismitoad. Or their previous evolutions, if you're not at those levels yet.

I'd like to do a grass gym. The gym would be one of the first you challenge. Probably the 2nd, so starter types don't factor in so heavily to the difficulty
1st battle:
Shroomish: lv 17
Lombre: lv 19
Grotle: lv 20
Pretty standard gym, nothing too gimmicky except lombre to beat fire type starters
I'd then, midway through the game call up the player for a rematch saying that I'd like to test out a new Pokemon.
2nd match:
lv 28 Roselia
lv 30 Ludicolo
lv 31 Shroomish
lv 32 Torterra
At around 6 badges, I call the player again and mention that want to test something else out
lv 39 Lileep
lv 39 Ferroseed
lv 42 Roselia
lv 42 Ludicolo
lv 45 Breloom (now with spore)
lv 45 Torterra
After this point, I mutter something about how I need to find a new strategy and I don't battle until the postgame where I'd have a team that involved setting up rain

Gym 5, Fire Type extraordinaire. Known as the Orphan Master, he takes in wild and abandoned pokemon to train and care for them. He's pale-skinned, raven-black hair, with two faint red scars across his cheek he sustaines from a wild Growlithe using Scratch.

The gym would be designed with long stretches of hot coals. On these coals would be barefoot Fire Type trainers, and random obstacles. The trick is, a timer starts when you walk onto the first tile of the coals and if you exceed the time limit due to obstacles or trainers, you are transported to the entrance of the gym.

I would have four pokemon on my team:

A lvl 34 Growlithe (the same one that scarred him)
A lvl 35 Quilava
A lvl 35 Houndoom
And a lvl 36 Ninetales

This gym is located in Johto
