You're not doing tons of damage but its having nothing to deal with an opponent you can't afford. Pokemon like Garchomp and Terrakion often don't use coverage and just their great neutral stabs because they're strong enough to muscle past neutral targets.
Nidoking and others like him do need the SE coverage because 1. They're comparatively weak and rely on SE hits for big damage and 2. The pokemon that wall them do so through sheer stats (snorlax, porygon2) rather than resistances.
