Grass is the technician of the Fire-Grass-Water trio.
Fire is the power, the glass cannon; all its strengths rely on damage output.
Water is the bulk, the sort of 'knight'; it can dish it out and take it, and is the most utilitarian type.
Grass is the weak, but skilled type. It has a wide array of affects (sleep, paralysis, poison, leech seed) and boosts and debuffs. Grass is also the most flexible type in the weather wars.
Grass ends up getting the short end of the stick due to the way Pokemon is set up, favoring the tank or the sweeper, and not the status effects guy.
Grass types also have the most variable starters. Fire is always, always a form of sweeper, Water is always a bulky tank, but Grass has sweepers, walls, and tanks.
