If I had my way, he'd go to Kalos with Ash, not to travel with him but to go to a sommelier/connoisseur academy or something (it is France after all, I'd think they'd be into that kind of thing). So he wouldn't be a full-time main character anymore, but would be close at hand to show up every so often.
