Start with Blue Rescue Team, then Explorers of Sky (which is like the Yellow/Crystal/Emerald/Platinum to Time/Darkness)

I'd say go with Red/Blue Rescue Team. If you're not so patient, go for Explorers of Sky already.

How does the game decide the pokemon you turn into and your partner, btw? I know there's some questions before you start and stuff, but anything else?

Quiz, and in Sky, Gender and Quiz.
Of partners, you can choose any of the starters+extras that aren't of your type.

If you're dead set on starting with a certain starter, you can find guides online on how to maximize your chances with the quiz.
