If Absol, Lucario and Mawile got normal evolutions, and Mega Evos were only given to three-stage pokemon, would you be happier?

Not particularly. These Pokemon needed to be improved, so Gamefreak improved them. It doesn't bother me whether they gave them evolutions, hidden abilities, new attacks, or as they did this time, alternate forms. All that matters is that these Pokemon are now actually viable in combat.

I prefer these mega evolutions. I like Absol, and now it doesn't have to permanently change into a different Pokemon in order to gain the benefits of evolution.

I think its a fair way to keep some slightly useful Pokemon and give them alternate ways to use them without fucking up the evolution line or making prevos obsolete

Giving this shit to Ampharos and Mewtwo makes sense, it makes zero sense to give these to Mawile, Blaziken and Absol though.

Give Pokemon who aren't already at the end of their evolutionary line new evolutions and give Megas to Pokemon that ARE at the end of theirs but need that extra buff to compete against the monsters in OU

An Absol evo would look even worse than its Mega evo.
A Lucario evo would be ridiculously OP.
And a Mawile evo probably wouldn't get Huge Power (though I wouldn't mind if it had gotten an evo instead, unlike with Lucario and Absol).

But yep I prefer it this way

mawile gets a normal evo
I like the idea of absol going super saiyan and sprouting wings so I'm okay with it being mega though it could go either way.
