I've watched every demo video I've been able to find and I didn't see anything. I did see one with someone stupid enough to use Swift instead of Fairy Wind on Exeggutor though.

Because eliminating all type coverage is a terrible ability.
It'll be even worse when it removes an actual STAB type.

Delcatty's offensive stats are atrocious. It's not going to be able to hurt anything with an SE attack so being able to Thunder Waving a ground-type is a worthy trade-off.
And if it's Normal/Fairy it'll still get stab.

You're using it wrong then. You should be paralyzing Ground-types and poisoning Steel and Poison types.
