Red's main Pokemon in Johto and the PWT is a Pikachu. That fact makes Yellow being canon make more sense than Red/Blue/Green since Pikachu is a starter in Yellow instead of a random Pokemon. Plus Red has all three starters, which he also can only get in Yellow. Yellow being canon makes sense.
