Because the front sprites were redone from the original red and green whereas the back sprites were not. Red and green sprites were terrible for a number of reasons.

What the fuck are you talking about? They look like that because the hardware was inferior and dated. It looked good back then because it was the latest in terms of hand held technology but to pretend like they were made in such a way that they came out looking like trash because of "charm" is truly the most asinine thing I've read all days. This. The shitty backsprites (and the awkward frontsprites) were likely due to a combination of spriting inexperience, the Game Boy's low resolution, and the zoomed-in POV (especially for the backsprites)

For some reason they had the back sprites use twice the pixel resolution to seem bigger despite just drawing them bigger working as evidenced by gen 2 onwards until this problem returned in Gen 5.
