The anime is terrible, and easily one of the worst examples of the genre. Anime is pretty shit over all, but Pokemon is so beyond shit it hurts. Don't do it.

Calling Pokemon an anime is a bit of a stretch. It's Japanese animation sure, but it's more of a shovelware western cartoon at this point, the kind of shit you see on Sunday afternoons between infomercials.

At the risk of being called a genwunner, I'd say gen 1 up until the Orange Islands is the best. The other generations start out okay, but generally become worse as they go on. It's all watchable though, more or less.
Actually, it might be a good idea to wait a bit and start watching when gen 6 starts, that way you won't really have to worry about catching up or anything.
Another option is to only watch the movies, they're all watchable without having seen the series. Maybe one or two references you won't get or characters you won't recognize, but that's all. I would still recommend watching them in order though.

It's all pretty shit. Ash is always a shitty trainer, his skill level as well as pikachu's restart every season. The humor is bland and annoying, team rocket only gets more annoying as the seasons progress. The first season is honestly the only one worth watching, just because it's become more dumbed down for kids as it progresses. But if you're okay with all of those cons, there are a couple scenes through all of the stupid fillers that may be worth watching in all of the seasons (battles toward the end of each season).

Honestly just read Manga.
