The fuck's the point of those circle areas that appear under the Pokemon when they appear in battle? They made sense in the 2D games, but why do we still have them on a fully coloured 3D field?

Not having circles would make the battlefield look barren, so they'd need to add additional details, but given this is a main series game with lots of places for battles to take place, it wouldn't be as feasible as with the 3D games where you could only battle in certain areas / in stadiums.

I'm more bothered by the inevitable size discrepancies

It's an aesthetic choice. It looks more interesting (and provides a bit of color contrast) than just situating them on a plain green field.

What's the point of any background at all? What's the point of showing the Pokemon? You can coordinate battles with the text information alone. Why doesn't it have ASCII graphics?

It's just stylistic

Note that they don't even appear in Horde Battles, they're just there because they're a staple of the series "look". Kinda like the cel-shaded graphics to retain the "flat drawing" quality of the art.

Conversely, none of the 3D games outside of Colliseum/XD had bare open environments like that, and they looked shitty without anything in them

Like I said, wouldn't be any more ridiculous than any of the other battle fields. Last I checked, grass circles don't spawn when I step on it and then unspawn when I step off it. I don't think perfect pools of water spawn on beaches either.
