Why do so many people on /vp/ hate the use of legendaries?

Personally, it just feels like it removes the difficulty.
The last time I used a legendary was my first playthrough of Black.

I never understood this much either. I just normally didnt use them because I grew to like my team or didnt care much for the moves Legendaries start out with.
But when they just HAND you a Genesect in b/w2 I tried it out.
Only to find out that I fed that thing trainers left and right and it required so much EXP to lvl up meanwhile the rest of my team only needs a bite and theyd lvl up like a mother fucker. It just seemed like a punishment to grind it so it would be useful.

That and I like things that evolve so I can get a sense of surprise or reward later down the line.

I don't use them in-game only because they're one-time obtainable Pokemon, meaning I would want to EV train them and I only EV train postgame after beating the main story. Finding those EV reducing berries is annoying anyway.

I used legends in nearly every game until Emerald. That was when I started developing teams and using "strategies" instead of simply playing through the game.

That's why I want to keep them at 0EVs until postgame when I can properly do it. During story I'd like to focus on beating gyms and stuff without stopping midway to get the EV items and doing the EV training, and I don't want unnecessary EVs leaking into the Pokemon if I end up using it in story. It was a little annoying in my first White playthrough when the story forced Zekrom on the final battles and I didn't know you could send it to the PC instead.
